The Mighty Dandelion
What is more hip than kale? Dandelions! Dandelions are some of the healthiest greens around, and, they are everywhere... in your yard and garden, along roads and pathways, in fields.
Ayurveda is all about embracing what's seasonal. As the summer heats up, you can balance the heat of the summer with bitter greens.
Bitter greens like dandelions grow abundantly all summer long and their bitter flavor is exactly what is needed to balance the heat of summer. According to Ayurveda, like increases like, and it’s opposite reduces. So, spicy salsa will make you feel hotter, but bitter greens like dandelions will actually cool you off.
As long as they have not been sprayed with herbicide or pesticide, they are perfect for your health. Dandelions are full of calcium, vitamin A and vitamin K, with twice as much iron as spinach. The plant is a powerful healer, used to purify blood, detox the liver, settle digestion, and to treat inflammatory conditions.
Benefits of dandelion greens:
You can enjoy dandelions all summer long and include them in your breakfast, lunch and dinner. Use them in your morning green smoothies. Add them to your salads. Saute them with garlic. Eat them straight up!
